When both arts at their best crossover, they turn into an amazing dining experience that foodies cannot miss! The renowned Portuguese restaurant FADO at Hotel Royal Macau is joining hands with the legendary J. Portugal Ramos Vinhos to host a
5-course wine pairing dinner on April 4, 2019. The Winemaker of J. Portugal Ramos Vinhos, João Maria Portugal Ramos will attend the event and share his first-hand information about each selected wine.
Portuguese Signature Dishes x Portuguese Great Labels
The welcome cocktail of the dinner event will start at 7:00 pm with the serving of two delicate canapes namely, Braised Beef Tongue in Canapes Style and Breaded Green Olives. Each guest will be presented with 2017 Marques de Borba Branco from the highly respected wine region Alentejo. The rich red apple, kiwi and spice notes of the wine give a refreshing prelude before the dinner starts at around 7:30pm.
The dinner will begin with the slow-cooked Suckling Pig Terrine, which is fragrant with green asparagus and roasted apple mousse. This is a perfect match with 2017 JP Ramos Alvarinho Branco which has intense aromas of tropical fruit zest. Elegant and engaging.
It is then followed by Grilled Octopus with Roasted Red Bell-pepper Mayo and Lightly Smoked Artichokes. Tender and amazingly seasoned, the octopus goes perfectly well with the 2012 Foz de Arouce Tinto, a wine with a delicate aromatic concentration of red fruits.
The course continues with the legendary Portuguese Meat Stew featuring potatoes, chorizo, pork ear, carrot, cabbage, bacon and chicken. The dish melts in your mouth and is bursting with flavours. It is professionally paired with 2015 Marques de Borba Reserva Tinto featuring jammy red fruits and firm tannins.
Then, the gelatinous Braised Ox Cheek with Pumpkin, Mushrooms and Broccolis will be served with 2008 O.Leucura Cota 200 Tinto that originates from a vineyard at the altitude of 200 meters above sea level. It is intense, elegant and with a complex aroma; a perfect complement to the rich flavours of the ox cheek.
Last but not the least, the sophisticated Chocolate Terrine, confit Strawberries with Vanilla and Light Egg Sponge will delight the taste buds of a gourmand. The experience will be further enhanced with the 2011 Duorum Late Bottled Vintage, a full-body wine with notes of cassis and blackberry that is a perfect accompaniment of chocolate and berry dessert.
About João Maria Portugal Ramos
Mr João Maria Portugal Ramos, like his father and grandfather, studied Agronomy at the Instituto Superior de Agronomia (ISA), School of Agriculture, in Lisbon. João has a European Master of Science of Viticulture and Enology in Montpellier, with internships in Bordeaux and Madrid universities. Apart from Portugal he has made vintages in Spain, Chile and South Africa. In South Africa João also had the chance to learn more on new viticulture and winemaking techniques in areas with lower water availability, a subject related to his earlier master theses (“The effect of Post Véraison Water Deficit Irrigation in temperate-hot climate regions”, 2014). It was in 2014 that João Maria finally joined the enology and production team of J. Portugal Ramos group in Alentejo – Vila Santa winery – alongside his father.
